Sausage Stuffed Mushrooms

Sausage-stuffed Mushrooms
Makes about 24 large mushrooms
Ingredients:
- 1lb large mushrooms, white or porcini if available
- 1lb mild Italian sausage, removed from casings
- 1stick butter, melted
- 1/2c Italian seasoned breadcrumbs
- 1/4c Italian flat-leaf parsley, chopped
- 1/4c finely grated Parmesan cheese
- 2 cloves garlic, minced
Directions:
- In a pan over medium high heat, cook sausage, breaking up until Brown and crumbly. Let cool while you prepare the other ingredients.
- Melt butter and let it cool slightly.
- Prepare your mushrooms— wipe any dirt off of them and remove stems—Reserved stems are to be used in filling.
- Place a sheet of parchment on a baking sheet and preheat your oven to 400°
- Mince mushroom stems and add to a bowl with the cooled sausage, breadcrumbs, parsley, Parmesan and garlic. Pour the melted butter over and mix until evenly incorporated.
- Scoop stuffing mixture into each mushroom
- Bake for about 20min, or until Brown and bubbly.
- Remove from oven and serve.
